To Canada, With Chocolate

With Canada Day approaching on July 1st, we spoke to talented chocolatier Glenn Knowles, owner of Gem Chocolates..

i. What are 6 adjectives that come to your mind when you hear the word ‘Canada?’
“Big, diverse, welcoming, peaceful, patriotic, flexible.”

ii. What are some unique things you have noticed about Canadians and chocolate?
“To generalize, there is an ever-increasing demand for artistic, colourful individual chocolates versus the traditional plain chocolates without artistic flair. Flavour-wise, the general customer base seek out a wide spectrum of flavours from traditional to a modern fusion of flavours that reflect our diverse society. Also, in general, there is often a reticence to choose an unknown flavour, as the vast majority of people select flavours that are already known to them rather than broadening their palate with new unfamiliar flavours.”

Knowles has been working around the clock, so he will be closing the Gem Chocolates store from June 28th to July 3rd for a much-needed break. Over the past days, he has been celebrating Canada with new chocolate flavours; something he will continue upon his return.

iii. Tell us about some of the Gem creations you are featuring in honour of Canada Day.
“Traditional Maple & Walnut Caramels, and Butter Tart (limited supply).”

“To me growing outside of Canada to Canadian parents,” Glenn Knowles tells us, “the most Canadian treat I can remember is my mum baking butter tarts – something unfamiliar outside of Canada. To me, with the hint of maple within the tart filling, it reminds me of my childhood and my Canadian heritage! We are nearly sold out already – proving that Butter Tarts are very Canadian!”
